I am passionate about creating contemporary, sharp and innovative designs while maintaining the elegance of the more classic styles. I always meet with clients to discuss their theme, colour palette, style and flavours. I believe this is the only way to get to know the couple’s individually and showcase their personality in their cake. I will always endeavour to set your wedding cake apart from the rest and we will explore various styles before designing your own special cake. Although I specialize in sugar flowers, I enjoy variety and creating something a bit different, a wedding cake that’s not just a cake but also a centerpiece.


For me, the taste is equally important as the design itself. I continuously test and taste my recipes to create cakes that are moist, soft and that the flavour combinations are unique and marry well. No pun intended! I am a huge advocate of high quality, Irish ingredients and where possible I shop locally and in season. My philosophy of ingredients and therefore flavour were instilled during my Ballymaloe training. I steer clear of artificial colourings, flavourings and preservatives. All the flavours and colours are natural from the raw ingredients used. You can feel good about eating these cakes that are made from scratch, no cake mixes here!


Each wedding cake is created with great care and to my very high standards. I limit the number of wedding cakes I take on each year in order to provide you with the highest level of service and attention.  I have all of the experience and creativity, to bring your ideas together. My philosophy for waste is something I’ve always abided by and a core principle in so many areas of my life. Put simply, I hate waste. It saddens me to think of so much food that is thrown away everyday. For this reason, all wedding cakes are made to order, no sheet cakes or off cuts here!  Although my general waste is low, due to composting food waste and recycling where possible, I am striving towards a zero general waste policy.  We always strive to use seasonal and irish products thus doing our bit to reduce our carbon footprint.
